Britannia kitchen ventilation have recently installed new extract canopies and remote supply air plenums to ventilate the busy production kitchen.
Large food production facilities combine hot cooking processes with low ambient temperatures, which produces significant amounts of condensation, on both internal and external surfaces of the canopies.
To overcome this problem Britannia incorporated a constant internal drain system to channel the condenate to low level. The drainage system is fully demountable to allow for deep cleaning.
Manufactured from welded 16swg stainless steel, the canopies are mounted high above large cooking vessels making filter removal a difficult procedure. To make life easier, a filter removal tool was designed to simplify the process for the maintenance staff.
Kettleby's food production runs round the clock, so the new system had to be installed in a tight 48 hour programme to minimise disruption of this busy facility.
